#3 Hearty Ham & Lentil Soup

Ingredients:
2 ½ cups (or 16oz package) dried lentils
7-8 cups chicken broth
4-6 envelopes ham flavoring (from 1.4 oz package)
2 bay leaves, broken in half
1 medium onion, chopped
1 carrot, peeled and diced
1 medium potato, peeled and diced
2 cups leftover ham, cubed
1 lb kielbasa, sliced (can also be smoked sausage)
½ cup quick cooking barley 

Directions:
In a large stock pot over medium high heat, combine lentils, chicken broth, 2 envelopes ham flavoring and bay leaves. Bring to a boil, reduce heat to low and simmer 1 to 1½ hours until leaves are soft. Add onion, carrot, potato, ham, kielbasa, remaining ham flavoring and barley. Simmer for 15-20 minutes or until barley is cooked and soup thickens. Remove bay leaves and serve.

Serves 6 to 8
