Demo Recipes

RED LENTIL HUMMUS

on Grilled Bread with Marinated Feta, Shaved Mint Shoshito Salad, Za Atar, and Olive Oil

5-6pm on Delivery Pullman Gazebo Stage

Red Lentil Hummus Recipe:

2 cups Red Lentils

1/4 cup Tahini

4 Garlic each

1/4 cup Lemon Juice

1/4 cup Olive Oil

1/2 cup Poquiilo Pepper

1 tbsp Smoked Paprika

1 tsp Cumin

1 tsp Coriander

1/2 cup water

Salt to taste

 

Rinse and boil lentils until tender. Drain and blend warm lentils with rest of ingredients until a semi smooth consistency. Salt to taste and serve with za atar and olive oil drizzle.

Chef Ryan Weed

Growing up in Seattle Ryan gained an appreciation for good food. Upon graduating from WSU in 2001, he took his passion for food and began his journey working in kitchens across Seattle in various roles. His kitchen resume includes the likes of The Harvest Vine, Tavolata, How To Cook A Wolf, Red Feather (Boise), and most recently Stoneburner. His appreciation for bounty and community has led him back to Pullman where he has been periodically working with Nick and the Black Cypress team.
